This is a georgous cake. Can't wait to give this recipe a try. Carrot Cake is my favorite. I have not made one in quite a while. Thanks for sharing.

Hi Flor,
Thanks for the compliment! I used toasted coconut and just gently pressed it into the icing. It makes a mess but it does taste great! I prefer the flavor of toasted vs regular coconut.

Could you tell me what you used for decorating the sides on this photo?
I really can´t tell (maybe coconut or carrot...?) but I love the soft "furry" look.
