To me the best meatloaf has burnt bits on it..lol When I make meatloaf, I always sneak all kinds of veggies in it by putting them in the FP and chopping very small.
Those black specks in there are not burned - they are black olives. The olives and oregano give this a really nice flavor. Although next time, I think I'm going to process it all in a food processor to make it more uniform - smaller pieces, so it's more smooth.
