Salt And Pepper To Taste. Stir The Vinaigrette Again And Pour It Over The Potatoes. Immediately Pour Broth Over Potato Slices. Slice The Warm Potatoes Into 1/4 Slices, Dropping Each Slice Into A Serving Bowl. Add The Minced Shallot And Parsley. Prepare The Broth. Cook Potatoes. Drain And Peel.
