Cool beans I think I will make it tomorrow night. My honey has been working nights and hasn't had a hot fresh dinner this week. So tomorrow night he is off and i'm gonna make him a feast. It will def be spanish influenced because that is what he loves best. He was hankering for some smotherfried porkchops but he cooked those the other day, remember when I said he cooked the shoulder steaks, it wasn't it was the large porkchops from the family pack. So i'm making him fajitas, fresh guacamole, salsa, black bean salad and this would be perfect to go with.

Hi Cynthia yes I made it for my dinner Wednesday night after Bob posted it.. I did use the rotel tomatoes with green chilie in mine so I had to make a change wher you do the cheese and bacon , I did not put the rotel there just mix in with the corn and meal. Still is a wonderful tex mex type of food and I served a dollop of sour cream on top wow this was wonderful
