I can tell you this, the chicken doesn't even need the panko crumbs to be good. Since we've started doing gluten free here at the house, I've experimented with brown rice flour, almond flour, sorghum flour, even mixed 'em all together but kept the herbs/spices the same...and all with good success.

Traditional Panko is not...however, I did find some gluten-free panko crumbs really recently in the special foods section of the grocery. I haven't had the chance to actually try them yet, but they look authentic enough. :)

Lisa, is Panko Gluten Free? OMG, I'd love to hear you say yes!! I hadn't even thought of that and I absolutely love it, so please tell me yes!! lol

I was in a hurry to send this chicken out the door, so in order to get a snapshot, I had to just quickly put it on a plate and take the picture...I drained it on paper towels afterwards. When you do it in the right order, it's not shiny-greasy! LOL ;)
