The dough really is pretty stiff, so I mixed it toward the end with my hands. Then I formed it into two equal logs, which I patted out to about 4 inches wide and the length of the greased cookie sheet. I baked them 20 to 21 minutes. They turned out good, but next time I think I will increase the sugar and the spices. I did add a few chopped dates and used golden raisins instead of the dark ones. I cut them into bars when they were about halfway cooled off.
