A variant adding rosemary and coarsely-grated Parmesan and Romano cheeses to the dry ingredients, cutting back on the salt to compensate, and using my inverted-Dutch-oven trick. My father, another foodie, called it the best bread he's ever tasted.

Mine didn't rise as high as Pat's though.
I didn't have an iron dutch oven, so I used a 2.5 qrt round casserole, and put an iron lid on it.
