I did not need/use any chicken broth, as the vegetables gave off enough liquid. Just disregard the broth in this picture.
I roasted a fresh red pepper, but you could use jarred.
My shells went nearly flat and the stuffing "split". No worries, they still tasted great! I think it was because this squash was SO big! Your walls should be about 1/4" unless the squash is HUGE like this one!
