Oh,my! I've looked and looked for this icing recipe. I didn't know what it was called and I had forgotten one important detail - the double boiler.I remember my aunt cooking it for us frequently about 60 years ago (I'm 65 now) and that she cooked and stirred a long time. She served it on chocolate cake. I remember one time she overcooked it and it turned into a solid shell when it cooled. We had to break it apart with a fork to eat it and we loved it! That's what I'm going to do when I cook your recipe - and soon! I haven't had a good pineapple cake in 'forever!' and my hubby doesn't care for anything pineapple, so I'll make my first one chocolate and overcook the icing. Then I'll follow your entire recipe later this month and make it pineapple for a special church fund-raiser dinner. This has absolutely made my day!
