Yes I did Leila, I actually cut a piece of wax paper to fit the bottom of the pan. Greased the pan, then put the paper then greased the top of the paper. Once I loosen the sides I really don't think it will be a problem at all to get out. Are you going to make your own candied ginger? I want to try that next week.

Sounds great Donna, every one will love it I'm sure. I will get mine started nex week,I hope, unless it is still raining to hard to go to town. Will let you know how it turns out for me. I forgot to ask you, did you line your pan so it will come out easy?

No Leila, but I'm sure either one will work. I bet a pretty bundt pan with a flavored glazed poured over the cake would be sooooo pretty. And a large bread pan would make it easier to slice. I'm going to leave it in the pan it's in for the next few weeks while I'm in the basting process. Then take it out, ice it and put it in a pretty christmas tin.

OH MY Gosh, that sounds delicious. Please tell your BD to let all of us know how delicious it is. Do you ever use a large bread pan or bundt pan for this cake?

I plan on putting a thin coating of homemade marzipan on it. Using this recipe Leila
8oz icing (confectioners) sugar
8oz castor (fine grained) sugar
16oz ground almonds
2 lightly beaten eggs
1 tsp vanilla extract
1 tsp lemon juice

1. Sift (strain) the icing sugar and then mix with castor sugar and almonds.

2. Add the vanilla.

3. Gradually add beaten egg, mixing it well as you add. Stop adding the egg when it forms a stiff paste.

4. Knead it well.

It says to put some warm apricot jam on the cake first and then put the marzipan. That's what I plan on, if BD doesn't eat it all first. Honestly I'm doing it more to make the top look pretty. The taste is already amazing. I don't think I'll ever do a traditional fruitcake again Leila.

Donna have you decided what frosting you were going to put on it yet? I love fruitcake with or without as with so many goodies inside it's great either way. Looks great and now I had better get to town and get my ing. so can make it.
