Ingredients

6 medium
potatoes, diced
1/2 lb
bacon (cut up)
1 small
onion, chopped
4 Tbsp
butter
1 can(s)
carrot, cubed
2 can(s)
evaporated milk
salt and freshly ground pepper to taste
1 clove
garlic minced
1/2 tsp
rosemary, dried
1/2 tsp
thyme, dried
1/2 c
heavy cream
8 c
water

ADD MORE WATER IF NEEDED

Step-By-Step

1In dutch oven, combine all ingredients except milk and cream.

2Cook potatoes and vegetables, bacon, and spices in water...30 minutes
After potatoes are done, do not drain water and turn down to medium heat and add butter just mash 3 to 4 times...

3Pour in milk and cream, salt and pepper to taste...stir and simmer at medium low heat for 20 minutes...serve hot....Enjoy
