Hearty Soup Mix
- dried split peas
- dried lentils
- uncooked brown rice
- uncooked barley
- uncooked small pasta or broken noodles
In a large soup pot combine 3/4 cup Hearty Dry Soup Mix (well rinsed), 6 cups water or vegetable stock, and 4 to 5 cups assorted chopped or shredded vegetables. (Saute vegetables in vegetable oil or butter first, if desired.)
Season to taste with tamari or soy sauce, salt, pepper, garlic salt, herbs or your favorite seasonings. Bring to a boil. Reduce heat and simmer covered for about 1 1/2 hours.
