Chunky Veggie and Stars Soup

We eat mostly low salt, vegetarian in our house due to high cholesterol and blood pressure. This is a very filling soup. It is almost a stew.

Ingredients

3 Tbsp
unsalted butter
1 large
zucchini
8
baby portebello mushrooms
1
bell pepper
1 bunch
baby carrots, about 15-20
6 stick
celery
1 small
white onions
2 clove
garlic
7 medium
tomato
1 large
russet potatoes
4 c
water
1 pinch
salt
1 pkg
lipton's onion soup mix
1 pkg
star pasta, about 7 oz

Step-By-Step

1Melt butter in a large pot.
2Chop all vegetables into large pieces, around 1/2 inch to an inch square.
3Add zucchini and let cook for about 4 minuets.
4Add mushrooms, bell pepper, and carrots and cook for another 3 minuets
5Add the rest of the veggies and cook for about 5 minuets.
6Add water, salt, and soup mix. Bring to a boil.
7Reduce heat and simmer for an hour.
8Bring up to a boil and add stars for about 8 mins.
