Chilled Cucumber Soup

This is a delicious version of the fat laden original. I need to watch it... This is also low carb, high protien. Enjoy, my recipe.

Ingredients

un peeled cucumbers
1 1/2
vidalia onions
2
either veggie or chicken bullion cubes or 1 can chicken or veggie stock
1 or 2 c
1-2% milk
4-6 c
cottage cheese, lowfat
1 Tbsp
butter buds or butter flavoring ***optional only
1 bunch
dill chopped or 4 tablespoons dry dil
1 tsp
cumin powder (must be fresh or leave out) ****optional
salt & pepper to taste
2 c
crushed ice

Directions Step-By-Step

take your chopped cucumber, onion, dill, spices, stock or bullion, milk, cottage cheese & whirl in the blender

add crushed ice & thin or thicken with either stock or milk to your preference. I like mine like a thick cream-based consistency & sometimes add more ice to make it really chilled; especially if it is to be served on a hot summers day! :-)
