Ingredients

3 lb
carrots, chopped
1 large
onion, chopped
2 Tbsp
butter
2 clove
garlic, finely chopped
1 tsp
curry powder (or more, if you like)
1/2 tsp
salt
dash(es)
pepper
4 c
chicken stock (35 fl. oz)
1 can(s)
coconut milk (400 gm)

Step-By-Step

1In a large pot cook carrots and onions in the butter over medium heat for 10 minutes.
2Add garlic, curry, salt and pepper. Cook for another minutes or two.
3Add stock, cover and bring to the boil. Lower heat and simmer 15 minutes until vegetables are tender.
4Add coconut milk, bring to a low boil, remove from heat.
5Cool slightly. Blend in a food processor or use stick blender. Garnish with parsley and croutons.
