| 6 c | water or chicken broth |
| 3 | carrots, sliced |
| 2 | stalks celery with leaves, sliced |
| 1 | yellow onions, chopped |
| 1/2 c | chopped green or red pepper |
| 1 | small bunch bok choy, chopped |
| 1 can(s) | red beans |
| 1 can(s) | chick peas |

Directions
Prepare all vegetablesBring water or chicken broth to a boil and add vegetables.Rinse beans in cold water and add to pot.Add bay leaves and salt if preferred.Cook for 1/2 hour then adds barley. Let simmer 2 hours or till veggies aqre tender.
