Turkey Barley Soup

A very hearty soup for chilly days. Can also be put in a crock pot. I adjust it as I think it needs every time I stir it so I tend to do stove top. I also use a chicken stock to intensify the chicken/turkey flavor.

Ingredients

1 1/2 lb
diced cooked turkey or chicken
6 c
chicken broth, low salt
2 c
chunked carrots
1 1/2 c
coarse chopped onion
1 1/2 c
coarse chopped celery
1 tsp
sea salt
2
bay leaves, dried
28 oz
diced tomatoes
1 c
pearled barley

Step-By-Step

1Put all ingredients except barley into a large stock pot and bring to a boil. Add barley and simmer until vegetables are tender.
2If the soup seems too thin I add more barley until it's where I want it.
