Food Processor

Ingredients

1 medium
onion, chopped
1 medium
cucumber, peeled and chopped
1
green pepper, chopped
1
garlic clove, minched
1/4 tsp
basil
1/4 tsp
oregano
1/4 tsp
thyme
1/2 c
olive oil
1/2 c
wine vinegar
1 tsp
salt
4-5
fresh tomatoes, or 1-16oz can **
1 c
tomato or v8 juice
garnishes: cucumber, celery stick, avocado

Directions Step-By-Step

Blend all ingredients (except garnishes) in blender or food processor.
Chill.

NOTES: I use 1-14.5oz can of "ready cut" tomatoes.
Serves 2-4 (serves more for a first curse before dinner, which is usually when I serve it.

I keep a small amount of the chopped veggies aside and add them back after everything is blended .. gives the soup a little texture.
