2 Tbsp
vegetable oil
1 lb
chicken breast halves, skinless and boneless
1 1/2 c
thinly chopped onion
8 ounce package mushrooms chopped
1 medium
carrot shredded
1 Tbsp
minced garlic
1/2 c
white rice
14 ounces chicken boulion soup prepared
1 c
1/2 tsp
ground black pepper
12 ounce cans evaporated milk
2 Tbsp
all purpose flour
4 c
fresh spinach copped
3 Tbsp
lemon juice


1in a medium stew pot on medium high heat cook chicken for 12 to 15 min turning over once after half of the cooking time. put chicken on plate to cool. when cool coarsley shred chicken

2Meanwhile, add onion, mushrooms, carrot, and garlic to the pot and cook 5 minutes, stirring occasionally. add rice, cook for 1 minute more add boullion, water, and pepper. Bring to boiling, reduce heat to simmer, covered for 15 minutes.

3in a small bowlstir together 1 can of the milk and flour, stir into pot. cook stir till bubbly. Stir in spinach and the shredded chicken, simmer, uncovered for 6 min. stir in lemon juice and black pepper. serve
