Best Barley Soup

2 tsp
canola or vegetable oil
1 lb
boneless, skinless turkey or chicken breasts, cut in cubes
1 1/2 c
chopped celery and chopped carrots
1 c
chopped onions
4 c
low-sodium, reduced fat chicken broth
1 can(s)
tomatoes undrained, and cut up (28 oz)
1/3 c
pearl barley, uncooked
3/4 tsp
dried marjoram
1/2 tsp
each ground thyme, ground sage, salt and black pepper
1/4 c
chopped fresh parsley


1Heat oil in a large saucepan over medium-high heat. Add turkey cubes and cook until no longer pink.

2Add all remaining ingredients. Mix well. Bring soup to a boil over high heat. Reduce heat to low. Cover and simmer for 30-35 minutes, until turkey and barley are tender.
