Sausage, Kale and Sweet Potato Soup

1 lb
sweet italian turkey sausage (i like jennie-o lean)
8 c
chicken broth, low salt
2 large
sweet potatoes, peeled and diced small
3 c
chopped kale
1 c
canned cannellini bean, drained and rinsed
1 large
carrot, peeled and diced small
1 stalk(s)
celery, diced small
1 c
cooked brown rice
1/2 small
red bell pepper, diced small
1/4 c
white wine
1/2 Tbsp
1 tsp
turmeric, ground
1 tsp
oregano, dried
1 Tbsp
parsley flakes
1 Tbsp
minced onion
1/2 tsp
minced garlic
1/4 tsp
2 Tbsp
olive oil


1Heat oil in a skillet.
2Add the onion, garlic, celery and bell pepper and saute 5 minutes.
3Remove casing from the sausage. Cut sausage into slices.
4Add slices to the skillet and brown.
5Place the sausage, onion, garlic, celery and peppers in a large soup pot.
6Add the broth, wine and sugar and bring to a low boil.
7Add the carrots,sweet potatoes, beans and spices.
8Reduce heat and simmer stirring occasionally, for 10 minutes or until carrots and potatoes are soft.
9Add the kale. Simmer for 10 minutes until tender.
10Add the rice and cook 5 minutes until heated through.
