You can easily make this a vegetarian soup. Just leave the ham out and replace the chicken broth with vegetable broth or water.

Slow Cooker Crock Pot

Ingredients

16 oz
dried lentils
1 can(s)
italian crushed tomatoes
1/4 c
celery, diced
1/4 c
sweet onion diced
2 c
chopped fresh spinach
1 1/2 c
cooked, cubed ham
2 c
chicken broth
5 c
water
2 c
diced carrots
1 tsp
oregano, dried
1 Tbsp
basil, dried
1/4 tsp
garlic powder
1 Tbsp
thyme, dried
to taste
salt and pepper

Step-By-Step

1Rinse the lentils and place in a slow cooker.

2Dice onion and celery small. Add to slow cooker.

3Peel and dice the carrots. Add to cooker.

4Add the remaining ingredient to the slow cooker. Stir to mix well.

5Turn the slow cooker on high. Cover and cook for 4 hours.

6Add more water if necessary. Stir occasionally.
