Ingredients

2 c
greek yougurt
1 c
cold chicken or vegetable stock
2 clove
garlic, crushed
2 Tbsp
chopped chives, and more for garnish
juice of 1 lemon
1 large
cucumber peeled and grated
1 Tbsp
chopped fresh mint
salt and freshly ground pepper to taste

Directions Step-By-Step

Combine the yogurt, stock, garlic, chives and lemon juice in a large bowl. Add the cucumber, stir well, and season with salt and pepper to taste. Chill for at least 1 hour.
