BLONDIE'S TOMATO BASIL SOUP

After eating tomato basil soup in several places, about 5 years ago, I tried my hand at it. Tis is what I came up with on the 1st try, so I've never changed it. I've eaten this type soup at several restaurants, but none are as good as mine (but I eat it anyway!)

Ingredients

2 c
fresh ripe tomatoes, peeled and diced
~~~or~~~
15oz can(s)
petite diced tomatoes
15oz can(s)
tomato sauce
4 Tbsp
real butter
3 Tbsp
fresh chopped basil
~~~or~~~
1 Tbsp
dried basil
1/2 tsp
white pepper, optional
1/2 c
half and half
~~~or~~~
1/2 c
heavy cream
salt to taste
4 slice
heavy grainy bread, toasted or not

Directions Step-By-Step

In a heavy saucepan combine all soup ingredients, except cream. Simmer on med-lo till it comes to a slow boil. Turn burner down to low and simmer for 10 minutes. Stir the soup constantly till cooked.

Remove from heat and stir in half and half or heavy cream.

Serve with the bread.

NOTE: If desired you can eat this with a grilled cheese on the grainy bread, so 8 slices wll be needed. Grill with cheese of choice. I recommend swiss or gruyere.
