This recipe I made one fine day when I wanted to make something very simple, yet very tasty...and boy was it.

Ingredients

16 oz
tilapia or mahi-mahi
2 large
potatoes,diced
2 large
carrot, sliced
1 c
onion
2 clove
garlic
1/2 c
cilantro
1 tsp
dried oregano
2 l
water
1 Tbsp
olive oil

Directions Step-By-Step

in a large pot, saute the onions in olive oil, add garlic, diced potatoes and sliced carrots.

add 2 liters of water, bring to a gentle boil about 20 mins.. till potatoes & carrots are fork tender

meanwhile cut your fish into nice big chunks, place into pot, simmer for another 20mins... add the oregano and cilantro, salt & pepper to taste....
