CREAM OF CAULIFLOWER BLUE CHEESE SOUP

A VERY GOOD COMFORT SOUP, THIS WILL CHASE THOSE WINTER CHILLS AWAY. ENJOY WITH A GOOD HOME MADE BREAD.

Ingredients

stalks celery, coarsely chopped

large onion coarsely chopped

cloves garlic minced
1 Tbsp
olive oil
5 c
chicken stock

head cauliflower coarsely chopped
1/3 c
white wine
1 Tbsp
lemon juice
1 tsp
worcestershire sauce
a pinch of dried marjoram
1/2 tsp
dried thyme
1 c
crumbled blue cheese
1/8 tsp
hot pepper sauce
2 1/3 TO 3 c
cream or low fat milk
1/2 c
flour

Directions Step-By-Step

IN A DUTCH OVER, SAUTE THE CELERY, ONIONS, AND GARLI IN THE OIL. STIR IN THE STOCK, CAULIFLOWER, WINE, LEMON JUICE, WORCESTERSHIRE, THYME, MARJORAM,AND HOT PEPPER SAUCE. BRING TO BOIL OVER HIHG HEAT, REDUCE HEAT, COVER AND SIMMER 15 MINUTES.

REMOVE HALF OF THE VEGETABLES AND PUREE IN A BLENDER OR PROCESSOR. STIR VEGETABLES BACK INTO POT. STIR IN BLUE CHEESE. WHISK IN THE FLOUR UNTIL BLENDED. STIR IN CREAM OF MILK. BRING ALMOST TO A BOIL, REDUCE HEAT AND COOK AND STIR UNTIL THICKENED
