Ingredients

1 medium
sweet onion diced
1 tsp
olive oil, extra virgin
1 Tbsp
.minced fresh ginger
3 clove
garlic minced
1/2 tsp
crushed red pepper
2 tsp
dried rosemary
1/2 tsp
salt

3 lb butternut squash peeled,seeded and cubed
1 lb
red apples ,peeled and cored and sliced 2/4 inch thick
2 c
apple cider
2 c
vegetable stock
1 Tbsp
lime juice

Directions Step-By-Step

Preheat a 4 quart pot over medium heat. saute onion in oil until translucent,5 to 7 minutes.Add ginger,garlic,red pepper,Rosemary and salt and saute for 1 minute.Add squash,apples,cider and stock.Cover and bring to boil,then lower heat and simmer briskly until squash is tender,about 20 minutes more,Puree soup using an food processor or blender.add lime juice and serve
