Broccoli and Swiss soup

I was going to make broccoli and cheddar soup,I had swiss cheese.
My family loved it.

Ingredients

2 bunch
broccoli, fresh
1 qt
chicken stock
2 c
half and half
1 c
onion small diced
1 Tbsp
minced garlic
3 c
swiss cheese shedded
1/4 c
roux
salt and pepper to taste

Step-By-Step

1In a large pot saute onions and garlic and then add the chicken stock.
2Cut the broccoi into small pieces and add to the stock and simmer until the broccoli is tender.
Then add the half & half,salt and pepper.
3Bring to a boil and add the roux until the soup thickens. Then turn off the heat and whisk in the cheese.
4When the cheese is melted its ready to serve.
