This is a nice healthy soup that is very tasty! It sometimes takes a little more flour paste to get it to the desired thickness, and sometimes we use ready made frozen grilled or roasted chicken, but other than that, I follow this recipe exactly! Garnish this dish with a bit of cheddar cheese & oyster crackers and enjoy!
1Heat water and lemon juice to boiling in a 3 qt. sauce pan. Stir in broccoli, celery, and onion. Cover and heat to boiling; reduce heat, simmer about 15 min. until the vegetables are tender; do not drain.
2Place in blender. Cover and blend about 45 seconds. Stopping frequently to scrape sides.
3Heat butter in 3 qt. saucepan over low heat until meltled. Stir in flour. Cook stirring constantly. Stir in broth, heat to boiling, stirring constantly boil and stir 1 min. Stir in broccoli mixture. Heat just to boling. Stir in chicken and milk. Heat just until hot.
4Thicken with extra flour paste if necessary. Garnish with shredded cheddar cheese and oyster crackers.
