Notes from the Test Kitchen:
This is a really tasty and quick soup to make - a good choice for after a long day at the office. I used mild salsa but it still packed quite a nice punch.

Ingredients

2(15 oz) can(s)
black beans, undrained
1/2 c
chunky salsa
1 Tbsp
chili powder
1(16 oz) can(s)
chicken broth
shredded sharp cheddar cheese
low-fat sour cream
minced green onions
chopped cilantro

Step-By-Step

1Place beans and liquid in a medium saucepan.

2Partially mash beans with a potato masher.

3Place over high heat;stir in salsa, chili powder and broth.

4Bring to boil.

5Ladle soup into bowls.

6Top with cheese, sour cream, onions and cilantro to taste.

7Serve with tortilla chips and margaritas.
