Ingredients

2(15 oz) can(s) black beans, undrained
1/2 c chunky salsa
1 Tbsp chili powder
1(16 oz) can(s) chicken broth
shredded sharp cheddar cheese
low-fat sour cream
minced green onions
chopped cilantro

This is a really tasty and quick soup to make - a good choice for after a long day at the office. I used mild salsa but it still packed quite a nice punch.

Directions

Place beans and liquid in a medium saucepan.

Partially mash beans with a potato masher.

Place over high heat;stir in salsa, chili powder and broth.

Bring to boil.

Ladle soup into bowls.

Top with cheese, sour cream, onions and cilantro to taste.

Serve with tortilla chips and margaritas.

This sounds delicious! I could use low fat sour cream, cheese, and chicken broth.

This sounds a lot like my slow-cooker version. I try and find refried black beans so that I don't have to mash the beans (yes, I'm that lazy) & I also try to find preseasoned canned beans (they have lime juice & cilantro in them). I use Ro-tel when I can't find the preseasoned beans bc they are usually seasoned for me. I'm going to have to try out your version! I know how good mine is so I know that yours has to be good :P

Sounds great, but would add a touch of cumin and cilantro for more of a Mexican kick.
