I usually only make these when having Seafood, but my son loves them and asks for them just as a snack...so, he got his way today...he dips them in Ranch dressing...they have quite the kick to them, as my jalapeno's are quite hot...you can make them without too - delicious either way!

Method:

Deep Fry

Ingredients

1 1/2 c
yellow corn meal
1/2 c
flour
2 tsp
baking powder
1/2 - 1 tsp
salt
1/4 tsp
onion powder
1 small
onion, minced
1 Tbsp
minced jalapeno - mine are hot, can use more if mild - optional
1
egg, slightly beaten
1 c
milk

Directions Step-By-Step

In a bowl, combine cornmeal, flour, baking powder and salt & onion powder.

Beat egg slightly and add it to the bowl, along with the milk, onion and peppers. Stir until blended. Leave batter set for about 5 minutes, before frying in hot oil.

Drop into hot grease by Tablespoonfuls. Fry until golden brown. ( flipping occasionally ).

Drain on paper towels and enjoy with a dip or garnished with Parmesan cheese. I normally serve these with fish, but the son wanted some as a snack...Lol!
