Easy, cheesy snack or meal Quesadillas

Sometimes I just need something fast & easy! Everyone loves this because it is quick & tasty!
I am a diabetic who sometimes needs to make something quick to keep me healthy. If diabetics don't eat every 3 1/2 to 4 hours, they can become very ill! These ingredients are always on hand in my kitchen to keep me on track!

any amount as long as you have the ingredients!


1 large
soft tortilla
1/8 c
(or a handful) of shredded cheese, any kind!
1 Tbsp
(optional) chopped onions or chives
1 Tbsp
(optional) jalapenos
1/8 c
(optional) canned white chicken
1/8 c
(optional) chopped green chilis

Directions Step-By-Step

Center the tortilla on a microwaveable plate. Add cheese or other optional ingredients. Get creative! bacon or sausage? Who knows! the possibilities are endless!
Microwave for one minute to ? depending on how many ingredients you add! Be careful because it will be hot to touch & hot to eat! Hot spicy or hot, hot, hot to handle!
Top with salsa or eat it plain! My personal favorite is Monterey Jack & chopped chilis! Enjoy
