medium zucchini, cut in 1/2 inch pieces
pepper, freshly ground
Chop 3/4 cup of the walnuts; set aside.
Saute the zucchini in the butter & olive oil until it is tender but not crisp, shaking the pan & tossing the zucchini with a wooden spoon so that it coats evenly.
Pour off the butter & oil & add the chopped walnuts, salt & pepper to the drained zucchini.
When the walnuts are well blended & heated, garnish with the remaining walnuts & serve.
