WITH A TWIST MOM'S Portuguese baked beans.

I'VE change a little from my mother and her mothers recipe.NOW ITS MY PORTUGUESE BAKE BEANS MOM use to soak those beans.IT seamed to take forever to enjoy her wonderful baked beans hot from the oven. SO NOW Twist from my mothers recipe,just making a little easyier

(19 oz.)rise white kidney beans.(set aside)
1 1/2 oz
fat back,cut into 1/2 x1
3 Tbsp
portuguese olive oil
1 c
red onion chopped coarse
1 c
green bell pepper chopped coarse
1 c
red bell pepper chopped coarse
1/4 c
sliced green olives
1 1/2 Tbsp
fresh rosemary leaves (chopped )
1 large
bay leaf
3 clove
fresh garlic, minced
1 1/2 tsp
red pepper flakes ( or fresh red pepper flakes
1 tsp
kosher salt
i like mushrooms,my twist.my own verssion
1 c
quartered mushrooms
also i prefer black olives ,not green.
1/4 c
good honey (if you prefer. )

Directions Step-By-Step

IN large pot add 2 tablespoons of olive oil
ADD back fat pieces,and cook for 2 to 3 minutes.
ADD ALL vegetables ,bay leaf and pepper and salt,.STIR AND simmer for 3 minutes.

ADD 1 1/2 cup of tomato sauce .Bring to a simmer.
ADD BEANS and mix well.YOU CAN ADD IF Prefer 1/4 cup of good honey
TRANSFER to greased casserole dish. DRIZZLE with 3 tablespoons of portuguese olive oil.AND COVER IT.
BAKE @ 350 * and bake for 1 hour.
WHEN REMOVED FROM OVEN Remove the bay leaf.
SERVE this wonderful bake beans with grilled small breast of chicken, and small salad. wonderful homemade bread and glass of milk or white wine. OH MY GOD.ITS SO YUMMY OUT OF THIS WORLD.AND RIGHT OFF PORTUGAL ,FROM MOMS OLD KITCHEN TO OURS NOW. 1/14/12
