Ingredients

1 Tbsp
olive oil
1/2 c
chopped onion
1/2 c
zucchini, grated
1 c
carrots, sliced and steamed
1 c
broccoli florets, steamed
3/4 c
oatmeal, uncooked
1 slice
whole wheat bread, crumbled
3 Tbsp
oat bran
3 oz
cheddar cheese, shredded
1/2 c
tomato sauce
1
egg
1/4 tsp
salt
1/4 tsp
pepper
1/4 tsp
sage
1/2 tsp
dried thyme
1/4 c
chopped parsley
6 Tbsp
parmesan cheese, grated

Step-By-Step

1Preheat oven to 375 degrees.
2In small skillet heat olive oil and saute onion
until translucent, about 5 minutes.
3In large bowl combine zucchini, carrot, broccoli,
oatmeal, breadcrumbs, oat bran and cheese.
4In small bowl beat together tomato sauce, egg and
egg white, seasonings and parmesan.
5Combine all ingredients and stir thoroughly to mix.
6Turn mixture into 9x5-inch loaf pan coated with
non-stick spray.
7Bake 30 to 35 minutes, or until firm.
8Let stand 15 minutes before slicing.
