Totally Exotic Carrot Slaw

Are you tired of the coleslaw rut? This carrot slaw has a totally over the top exotic flavor. It almost transports you to a tropical island. I just made it for a picnic and everyone wanted the recipe. I hope you enjoy it as much as we did.

2 lb
shredded carrots, i like to shred my own, they are sweeter
3/4 c
mayonnaise, not miracle whip
1/2 tsp
kosher salt
1/3 c
1/2 c
crushed pineapple, drained very well
1/2 c
golden raisins
2 tsp
curry powder
1 1/2 tsp
minced garlic
1 1/2 tsp
minced ginger
1/2 tsp
celery seeds or leaves
1/2 c
chopped cilantro

Directions Step-By-Step

Shred the carrots if you are doing it yourself, otherwise, add the carrots to a large bowl.
In large mixing bowl, whisk together the mayonnaise, salt, sugar, pineapple, raisins, curry powder, garlic, ginger, celery seeds or leaves and cilantro. Add the carrots and combine.
Serve immediately or refrigerate for an hour to chill. The longer it sits the more flavorful it becomes.
You can always add some sugar glazed almond slices for crunch. I have added toasted coconut as well... just sprinkled some over the top. It is awesome!
