I found this recipe a couple of years ago, I loved it and made it for a friend who thought they didn't like Sweet Potatoes, he fell in love with it and i've been making it ever since, I make it for a light breakfast with a mini Bagel and a cup of Coffee

Ingredients For sweet potato hash

  • 2 c
    diced sweet potatoes
  • 3 Tbsp
    olive oil or grapeseed oil
  • 1 c
    diced red onion
  • 1 c
    bell pepper (your color choice)
  • 2 clove
    minced garlic
  • 2 Tbsp
    chives
  • 1 tsp
    smoked paprika
  • 1/2 tsp
    ground pepper
  • drizzle
    balsamic reduction

How To Make sweet potato hash

  • if boiling, leave whole till cooked
if baking, go ahead and dice

    Sweet Potatoes can be baked or boiled, if you want the skin for extra crunch, boil whole then cut or if baking go ahead and dice sweet potatoes before baking
  • after cooking onions, peppers and garlic in bowl
(I didn't use peppers in todays because I had it for breakfast)

    while Sweet Potatoes are cooking, put oil in skillet on Medium and heat oil, then add Onions and Peppers till Onions are clear (sorry, didn't get picture of the cooking process)

    Add Garlic and cook for another minute or till they are aeromantic, place in bowl and set aside (i didn't use Peppers in this batch because i had it for breakfast)
  • place cooked potatoes in heated skillet with oil

    when Sweet Potatoes are cooked and diced, add to 1 1/2 tablespoon heated oil till golden brown, add to bowl with veggies, add Smoked Paprika, Ground Pepper, and Chives, mix well
  • place 3/4 cup on each plate

    add 3/4 cup to each plate and drizzle some Balsamic Reduction over each serving for an amazing kick to your taste buds
