SUPER SUMMER SALAD (SALLYE)

What can I say? It's summertime and the eating is easy (and healthy)

This is a salad to use some of those delightful things coming out of your garden. Or from the Farmers Market or grocery if you don't have a garden.

You can eat as much of this salad as you can hold and still feel righteous because it is so good for you.

NOTE: PREP TIME INCLUDES 2 HOUR MARINATING TIME

Ingredients

SALAD VEGGIES

8 oz
cauliflower florets
8 oz
broccoli florets
2 small
yellow crooked neck squash
4 small
zucchini
1/2 medium
cucumber
3 to 5 small
green onions
2 medium
carrots
8 oz
grape or cherry tomatoes
8 oz
mushroom caps (optional)

MARINADE INGREDIENTS

1 c
white rice vinegar
1/2 c
red wine (or red wine vinegar)
1/4 c
lemon juice
1/2 tsp
dry mustard
1/2 tsp
dried oregano leaves (i use mexican)
1/4 tsp
anise seed
1/2 tsp
sea salt
1/2 tsp
garlic powder (not salt)
2 Tbsp
extra virgin olive oil

Directions Step-By-Step

Place all marinade ingredients in a deep bowl and whisk briskly until well blended.

Set aside.

Break up cauliflower and broccoli florets into bite size pieces and place in large mixing bowl .

Slice cucumber, yellow and zucchini squash into thin slices and add to to mixing bowl.

Slice onions, including green part, into thin slices and add to mixing bowl.

Julienne carrots and add to mixing bowl.

You can either slice the mushrooms and tomatoes or add them whole to the mixing bowl. Slicing will allow the marinade to penetrate them better.

Pour marinade over vegetables, stirring with wooden spoon to make sure all ingredients are coated.

Cover and place in fridge for at least 2 hours before serving (this is an easy dish to make ahead).

Stir several times to assure even coating.

The beauty of this salad is that you can add and subtract any vegetables that are to your taste.
