Stuffing Bread Salad

This is a quick and tasty recipe for a Tuscan bread salad.

whole grape tomatoes
1 medium
1 small
red onion
1 small
yellow bell pepper
6 oz
can large pitted ripe olives, drained
1/4 c
balsamic vinegar
1 tsp
ground basil
2 clove
minced garlic
2 Tbsp
extra virgin olive oil
1 small
bag or box of bread stuffing(the cubed kind no seasoning -not stove top type
1/2 c
grated,ricotta salata or crumbled feta cheese, optional

Directions Step-By-Step

Wash and place tomatoes in a large bowl. Cut cucumbers lengthwise in half; scoop out seeds. Cut cucumber, pepper and onion in bite size pieces; place in bowl with tomatoes.. Stir in olives, vinegar, oil, basil, and garlic. Add the crusty stuffing cubes to vegetable mixture; toss gently to coat with dressing. Sprinkle with cheese, if desired.
Ricotta salata is a firm, pungent cheese suitable for grating. If unavailable, feta cheese may be substituted.
