Simply Delicious Butternut Squash

- 1 large
- butternut squash
- 1/2 pt
- low-fat sour cream
- 1 medium
- sweet onion
- 1 tsp
- 2 Tbsp
- real butter
1PARBOIL the WHOLE squash, or in halves for 25 minutes. Drain, and set aside to cool. When cool, remove peeling, and seeds. Cut squash into medium size cubes. Set aside.
2In 2 TBSP real butter, saute the onion until clear.
Add sour cream to onions, and mix well.
This completes the preparation and dish is ready to serve; or it can wait like this until closer to serving time if you wish.
3To serve put cubed squash into serving bowl, (for a fancy dinner like Thanksgiving or Christmas, it's beautiful in crystal or stonewear alike). For regular supper at home, each person can serve themselves with the amount of squash and topping they like.
Cover top of squash with the onion-sour cream mixture, and serve while still warm.
4It's beautiful served along with green beans or broccoli, or any dark green veggie of choice.
