I saw this as a side dish at Whole Foods. This is my interpretation of their recipe.

Ingredients

red bell pepper

zucchini

yellow squash

red onion

orange bell pepper
2 Tbsp
olive oil, extra virgin
pinch
sea salt
2 clove
garlic

Directions Step-By-Step

Slice bell peppers,zucchini, yellow squash, and red onion. Mince garlic. Over medium heat add olive oil, garlic, and onions. Add remaining ingredients. Cook until vegetables soften. Add sea salt to taste.
