SAUTEED SPINACH BY SALLYE

This is a great way to cook fresh spinach...tastes great and maintains most of the nutrients. Even people who aren't crazy about spinach like this satueed version.

Ingredients

1 pkg
baby spinach, prewashed
2 Tbsp
olive oil
sale & pepper to taste
1
hard boiled egg (optional)

Step-By-Step

1Heat olive oil to medium hot in a large heavy dutch oven or skillet

When oil is slightly smoking, add entire package of spinach and cover pan with lid
2RESIST THE TEMPTATION TO LIFT THE LID OF THE PAN FOR ONE MINUTE
3After one minute, remove the lid from the pan

Add salt and pepper to taste

Stir the spinach around until all of it is cooked (generally about 1-2 minutes will do it)

The spinach makes its own juices.
4Plate and garnish with slices
of hard boiled egg (optional)
