Ingredients

1 lb
mushrooms
2
zuchinni
1 large
eggplant
2
green peppers
1
red pepper
2
onions
2 large
cans stewed tomatoes w/ basil
3-4 clove
garlic, mashed
1 tsp
basil, dried
1/2 tsp
marjoram, dried
1/2 tsp
thyme
2
bay leaves
1-1 1/2 c
white wine, dry ( i use chenin blanc)

Step-By-Step

11.Rough chop your veggies, Peel Eggplant and chop into bite size pieces.
22. Saute your spices, garlic, onion,in 1/8 to 1/4 cup olive oil, start adding veggies in order given and saute 2 to 5 minutes between each addition.
Add wine and tomatoes last. vegatables should be tender crisp.
