Over medium-high heat, preheat a large pan, add olive oil and onion, and saute until onion turns translucent ( about 3 minutes).
add the pepper, cook for another 2 minutes. Add zucchini and eggplant and cook an additional 2 minutes, stirring occasionally.
Add sthe chopped garlic, stisr, cook for 1 minute, then add the tomatoes and oregano. reduce heat to low, season with salt and pepper, cover and simmer until the vegetables are tender but not soft (10minutes). sprinkle 1/2 of shredded cheese. enjoy!!!!
