What a nice tastey lunch or side dish, different from the norm pasta salad. The flavors are amazing!!!

Ingredients

garlic flavored olive oil
1 c
quinoa, cooked
bunch asparagus
1
red pepper julienned
2
ears corn

DRESSING

1/4 c
canola oil
1/4 c
red wine vinegar
1 tsp
dijon mustard
2 tsp
lemon juice
s&p

Step-By-Step

1Prepare quinoa according to directions, drain and set aside.

2Mix veggies in bowl and drizzel with oil and season.
Place on heated grill or grill pan and cook while turning for few min til tender crisp.

3Chop grilled veggies and remove corn from cob.
Toss with quinoa.

4Make dressing and pour over salad. Refrigerate for 2 hours or overnight.
Serve as side dish, or main dish with crusty bread or wheat crackers.
