1Cut the ends off the green plantains. Make a long cut on the back of the plantain and peel the skin off. (Be careful not to get the milk sap on clothes as it will stain). Cut into 1/2 inch slices and rub with some salt. Deep fry like french fries until golden. Remove. Put on paper towls or brown paper sacks to drain. Mash in the center with the bottom of a heavy glass. Return to hot oil and fry again until crisp.
