This orzo salad is big on flavors and oh so good. I really liked the snow peas. They add a pleasant sweetness. Yummy!

Ingredients

1 c
orzo pasta, uncooked

garlic cloves, smashed
1 Tbsp
olive oil
1 c
snow peas
1 c
spinach, fresh
2
sun-dried tomatoes, julienned (sliced thin)
1/2 c
Parmesan cheese

Directions Step-By-Step

Boil the orzo according to package about 8 mins, drain & set aside.

In a skillet, add the olive oil and garlic (don't brown) on low heat about a minute. Add the spinach, snow peas, sun-dried tomatoes & Parmesan cheese. Stir together, cover until the Parmesan melts about 5 mins. Add salt/pepper to taste.
