I cook almost every night and like to have a vegetable with my meal. Trouble is I want something quick and yummy. I used to go through the bother of making glazed carrots only to be frustrated at the time, money and energy spent that usually did not yield consistent results. Then an epiphany ! So I share my simple fast and delicious solution with all of you.
In a small to medium pot with a lid, place butter, salt, cayenne pepper, carrots, ginger and 2 tablespoons of water. Bring to a boil; reduce heat to simmer on low heat; stir; cover and check for desired doneness. Some like a firmly cooked carrot, some like a softer one, test with a fork to obtain your preference. Monitor water level and add more to insure no burning. Finish and leave on stove with lid on pot while finishing up the main entry; may require a sight reheat, but there you are !
Alternate ingredient to orange marmalade is apricot jam.
