Ingredients

3/4 c
vegetable oil
1/2 c
heinze wine vinegar
1 1/2 tsp
salt
1 tsp
sugar
1/2 tsp
basil, dried
1/4 tsp
thyme, dried
6
whole peppercorns
1
clove garlic, split
1
bay leaf, dried
1 1/2 lb
small fresh mushrooms

Step-By-Step

1Add all ingredients except the mushrooms to a medium size pot. Heat to boiling, cover, simmer 10 minutes.

2Add clean fresh mushrooms, simmer, uncovered 3 minutes.

3Transfer mushrooms and liquid to a bowl, cover and chill for 1 hour or overnight. You can drain and serve or I like to let my mushrooms soak in the liquid.

4Makes about 3 1/2 cups.
