Lola's Green Bean Salad

Source: My mom's best friend, Lola.
This recipe is simple, easy, healthy and a great side dish or salad. I love it with roasted or grilled chicken (check out my Beer Can Chicken recipe). The dressing for this recipe is also the same one I use for my Cucumbers and Onions.

Ingredients

1 can(s)
baby lesure peas, drained (1-10oz. pkg frozen baby peas, thawed can also be used)
2 can(s)
french style green beans, drained
1 c
chopped celery
1/2 c
chopped green pepper
1/3 c
chopped onion
1/4 c
diced pimento (in jar) (have used diced red pepper when out of pimento)
3/4 c
sugar (can use splenda)
1/3 c
apple cider vinegar
2 Tbsp
water
1/2 tsp
salt, (optional)

Directions Step-By-Step

Mix together sugar (or splenda), vinegar, water and salt. Stir until sugar is dissolved. Set aside.

Mix all vegetables together; pour dressing over vegetables and mix until combined. Cover and refrigerate until ready to serve.
